Low Carb Keto Pizza Casserole Recipe
This easy keto low carb pizza casserole recipe is so versatile that you can add any of your favorite pizza topics. My family loves Pepperoni and green olives, but if you want other topics, be creative. You can add mushrooms, banana peppers, onions, bacon, bell peppers and more. This recipe is only 4 net carbs per serving because we use fresh cauliflower instead of making a wheat crust. It's so delicious that you're family will love it and you can make a large casserole of it so you have leftovers for the next day.

Ingredients

  • 1 large head of cauliflower florets cut into small bite-size pieces or 2 (15oz bags of frozen cauliflower.
  • ½ teaspoon Salt
  • 2.5 ounces Pepperoni or Turkeyroni
  • 1 pound hot Italian Sausage, if in casings remove from casing before cooking
  • 1 tablespoon Olive Oil
  • 8 ounces Mozzarella cheese shredded
  • 1 jar of low-carb Marinara Sauce. Rao’s Homemade Marinara is very low carb
  • 1/4 cup Parmesan cheese powdered
  • 1 teaspoon Italian Seasoning
  • Oregano and Garlic powder to taste
  • Optional: mushrooms, onions, bell peppers, green olives, banana peppers, bacon bits

Instructions

  1. Preheat oven to 400 degrees F.
  2. Prepare a large 13x9 inch casserole dish by spraying it with non-stick spray
  3. Put cauliflower in the pan and drizzle with olive oil. Toss. Roast until soft. Remove from heat and press into the bottom of the casserole pan.
  4. Top the roasted cauliflower with a jar of marinara sauce.
  5. In a large skillet over medium-high heat cook the Italian sausage, approximately 15 minutes. When the sausage has finished cooking drain the excess fat. Set aside.
  6. If using mushrooms or bell peppers, sauté in the same skillet over medium high heat for 10 minutes to remove the excess water. Drain liquid off, if any. Set aside when done.
  7. In a large bowl add the cooked Italian sausage, mushrooms, and green peppers. Toss together until well mixed.
  8. Spread the mixture over the marinara sauce in the casserole dish. Sprinkle with Italian seasoning, garlic powder and oregano. 
  9. Top with mozzarella cheese and half the parmesan cheese. Sprinkle with Italian Seasoning.
  10. Lay the pepperonis on top.
  11. Sprinkle the remaining parmesan cheese over the pepperonis.
  12. Next add the remaining toppings such as green olives, onions, banana peppers, bacon bits, etc...
  13. Place in oven and bake for 30 minutes, or until the casserole is warmed through and the cheese is fully melted. You may want to broil for 3 minutes to make it hot and bubbly on top.
