Healthy Shrimp Linguine Recipe using Palmini...

This recipe is delicious and using Palmini Linguine (made with Hearts of Palm) instead of wheat pasts, you will cut the carbs to only 4grams per serving.

INGREDIENTS

  • 1 lb large shrimp, peeled & deveined, patted dry
  • 1 tablespoons olive oil
  • 1 tablespoon butter
  • 1 can Palmini Linguine pasta
  • 1 ½ Tbsp of garlic, minced
  • Lemon slices for garnish
  • 2 tablespoons white wine
  • 1⁄2 a lemon, juiced
  • 2 tablespoons Romano cheese, grated
  • red pepper flakes, to taste
  • 2 tablespoons fresh parsley
  • 1 tablespoon basil
  • salt & pepper, to taste

DIRECTIONS

  1. Bring a med-large pot of water to a boil. Drizzle some oil in it. Add a little salt 1. Add the drained linguine, and cook for 8 to 10 minutes. Drain after cooking.
  2. Meanwhile, in another large, heavy-bottomed pan, melt the butter and olive oil over medium-low heat. Add the garlic. Sauté for 1 minute. Then add the shrimp. Sprinkle with salt and pepper. Sauté until the shrimp have just turned pink, about 3 minutes, stirring often. Reduce heat to simmer. Add the white wine, lemon juice, fresh parsley, fresh basil and red pepper flakes. Let simmer for a few seconds.
  3. Add the cooked and drained linguine to the pan. Gently toss with the shrimp and sauce. Top with Romano cheese. 
  4. Transfer to a large dish and serve sprinkled with additional grated cheese and lemon wedges.
