Ingredients
- 3 Tablespoons olive oil
- 1 pound boneless chicken breasts, diced into bite size pieces
- 2 large broccoli heads, florets removed
- 1 cup mushrooms
- 1 cup diced white onion
- 1/2 cup low-sodium vegetable or chicken broth
- 2 garlic cloves, minced or grated
- 1/4 teaspoon Garlic Powder
- Salt and pepper, to taste
- 1/4 teaspoon dried thyme
- 1/4 teaspoon dried parsley
- 1/4 teaspoon onion powder
- 1/4 teaspoon red pepper flakes, optional if you like spice
- 1 cup shredded parmesan cheese
- 1/2 cup shredded low-fat mozzarella cheese
Instructions
- Preheat the oven to 400 degrees F.
- Bring a pot of salted water to a boil. Add the broccoli florets and cook until tender, about 2-3 minutes. Drain. Cut florets into bite sized pieces and place in a large casserole dish.
- Heat a skillet over medium heat and add 1 Tablespoon olive oil.
- Season the chicken with salt and pepper and cook until slightly browned and just cooked.
- Remove the chicken from the skillet and add to the casserole dish with the broccoli.
- Using the same skillet from the chicken, heat the remaining 2 Tablespoon olive oil over medium-high heat. Add garlic, onion and mushrooms and cook for 5-8 minutes or until the onion is very soft and translucent and mushrooms are sautéed.
- Add the thyme, parsley, garlic powder, onion powder and optional red pepper flakes. Gently stir the broth into the onion mixture until it begins to thicken, about 2 minutes.
- Add the onion mixture to the casserole dish with the chicken and broccoli. Stir to combine.
- Sprinkle the cheese over the top.
- Cover with foil and bake for 25 minutes or until the cheese is melted.
- Remove the foil and broil until the cheese is lightly brown, about 1-2 minutes.
