Ingredients

  • 3 Tablespoons olive oil
  • 1 pound boneless chicken breasts, diced into bite size pieces
  • 2 large broccoli heads, florets removed
  • 1 cup mushrooms
  • 1 cup diced white onion
  • 1/2 cup low-sodium vegetable or chicken broth
  • 2 garlic cloves, minced or grated
  • 1/4 teaspoon Garlic Powder
  • Salt and pepper, to taste
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried parsley
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon red pepper flakes, optional if you like spice
  • 1 cup shredded parmesan cheese
  • 1/2 cup shredded low-fat mozzarella cheese

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Bring a pot of salted water to a boil. Add the broccoli florets and cook until tender, about 2-3 minutes. Drain. Cut florets into bite sized pieces and place in a large casserole dish.
  3. Heat a skillet over medium heat and add 1 Tablespoon olive oil.
  4. Season the chicken with salt and pepper and cook until slightly browned and just cooked.
  5. Remove the chicken from the skillet and add to the casserole dish with the broccoli.
  6. Using the same skillet from the chicken, heat the remaining 2 Tablespoon olive oil over medium-high heat. Add garlic, onion and mushrooms and cook for 5-8 minutes or until the onion is very soft and translucent and mushrooms are sautéed.
  7. Add the thyme, parsley, garlic powder, onion powder and optional red pepper flakes. Gently stir the broth into the onion mixture until it begins to thicken, about 2 minutes.
  8. Add the onion mixture to the casserole dish with the chicken and broccoli. Stir to combine.
  9. Sprinkle the cheese over the top.
  10. Cover with foil and bake for 25 minutes or until the cheese is melted.
  11. Remove the foil and broil until the cheese is lightly brown, about 1-2 minutes.
